How to cook frozen chicken

Sometimes we have so much stuff to think about that we completely forget to let the meat you want to cook up for either lunch or dinner to unfreeze. And then you have 2 choices, either change the meal idea you had, or do something about it.

Me, I keep forgetting to unfreeze, so one day I decided to try out a recipe I saw on google on how to cook frozen chicken.

I must say right away it worked really well, and now I will show you an easy recipe to do it with my own twist.

Mixed herbs
Salt and pepper
2 lemons - Lemon juice
Frozen chicken

Pre-heat your oven to 350 degrees F or 180 degrees C.
On a baking tray put the juice of the 2 lemons, the chopped garlic, herbs, salt an pepper to your taste, and mix them up.

Put your frozen chicken (in my case frozen chicken breast) on top of your herb mixture.
Cover the tray with foil, with the shinny part to the inside.

Let it cook for 20 minutes with the foil.
Uncover your chicken, if your breast were stuck together when you put them in the oven, this is the time, to push them apart, put it back in the oven uncovered and let it cook for another 25 minutes.

Check if the chicken has cooked through. If not, put it back in the oven for a few more minutes.

I dished it up with some rice. The left over juices in the tray are great to top up the chicken or whatever you are serving it with.

  1. This looks delightful and perfect for a quick dinner x

  2. This looks really simple to cook. Thanks for sharing x

  3. Looks like it turned out well! I wouldn't try this with chicken on the bone for food safety reasons :-) but this looks like a great hack for chicken breast if you forget to defrost.
