Chocolate cake with orange filling recipe
I love the combination of chocolate with orange, and this was one of my creations.
- 2 cups granulated sugar
- 1 cup buttermilk
- 2/3 cup vegetable oil
- 1 cup water
- 2 eggs
- 2 cups flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1/2 tsp baking powder
- 3/4 cup unsweetened cocoa powder
- 1/2 tsp vanilla extract
- 1 tsp instant espresso powder
Preheat the oven to 350 degrees F or 180 degrees C. Grease and flour 2 nine inch pans, and set aside.
Add the espresso to the water and stir it to solve, set aside.
In a large bowl, add the sugar, buttermilk, oil, espresso water, vanilla extract and eggs. Whisk all to combine.
Add the flour, cocoa powder, salt, baking powder and baking soda. Mix to combine but do not over mix!
Divide the cake batter as evenly as possible between the 2 pans, and put them to bake for 35 minutes or until cooked through.
After cooked, let the cakes cool until they are completely cooled (more or less 45 minutes).
Orange Icing Ingredients:
- 2 eggs
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1 pinch salt
- 3/4 cup water
- 1/2 cup orange juice
- 1/4 cup lemon juice
- 3 tsp orange zest
- 3 tbsp butter
Orange Icing Preparation:
In a heatproof bowl whisk the eggs, set aside.
In a saucepan whisk the sugar, cornstarch and salt.
Add the water, orange juice, lemon juice and zest and whisk until smooth.
Bring it to a boil over medium heat and whisking constantly.
When it comes to a boil, reduce the heat and let it cook in a very slight simmer, still whisking until the mixture thickens (more or less 2 minutes).
Now be careful, because this is where things can go wrong.
Add half the hot mixture to the eggs in a very slow stream and always whisking (this will prevent the eggs from curdling).
Now put the egg mixture into the sauce pan with the rest of the hot mix, cook it over medium-low heat while whisking until it reaches to boil point.
Remove the pan from the heat and add the butter. Mix it until completely melted.
Put your mixture in a bowl and cover it with cling wrap touching the surface of your mixture.
Put it in the fridge and let it chill for about 1 hour.
Putting the cake together:
This is the easiest part.
Place one layer of the cake on a serving plate, and spread half the filling on top.
Put the other layer of the cake on top of the filling and spread the rest of the filling on top of it.
