Gammon Joint with potato and veggies Recipe

This is my husband's recipe, so measurements aren't very exact but they work.


Recipe for 4 people.

- Oil
- 6 potatoes
- Flour
- 1 kg Gammon joint
- Carrots
- Parsnips
- Broccoli
- Cauliflower
- Green beans


First is first, turn the oven on 200 degrees. On a baking or roasting tray add about 1cm of oil and put it in the oven to heat up along with the oven.

Peel your potatoes, cut them to your desired shape, and have them boil with water for 5 minutes in a pan.
Take them out, rough the surface with a fork, and flour them lightly. The roughness will hold the flour. Set aside.

When your oven has reached the heat, put the joint in tray that was inside the oven, and cover with foil. Let that cook for 40 minutes.

Wash, peel and cut up the carrots and parsnips to your taste. Wash and cut the broccoli, cauliflower and green beans, and set all aside.

When the 40 minutes are up, open the oven, and put the potatoes in the tray along with the joint for 15 minutes. Let the joint be covered in foil still but the potatoes free.

After the 15 minutes, turn the potatoes and add the parsnips to the tray. Leave them to cook for 15 more minutes.

The second 15 minutes being over, check on the potatoes e parsnips and turn them again to let cook for an additional 15 minutes.
Tip: The parsnips have to be moist still.

In these 15 minutes bring water to a boil in a pan.

When the 15 minutes are up, turn the potatoes and parsnips if needed, uncover the joint, and let it cook for the final 10 minutes.
Add your veggies to the boiling water, and let them cook for those 10 minutes.

When done, assemble all in a plate and serve!

  3. Ooh! Love a good roast! Not a gammon fan either. There are so many meats to choose from though and a roast is just as good with a nut loaf or just the veg and a great sauce. I'm sure you enjoy your hub's cooking Paola!
