Pesto Salmon Recipe


This is a brilliant and very tasty recipe, also extremely easy to do.

Ingredients:

2 tsp pesto
1/2 tsp English mustard
1 tsp lemon juice
Mixed herbs to taste
Cajun spice to taste
Paprika spice to taste
1 tbsp olive oil
90g cheddar cheese
250g salmon pieces

Preparation:

For the sauce: mix the pesto, English mustard, mixed herbs, and lemon juice. Set aside.

Fry up on olive oil Cajun spices and paprika until the smells get released. Add the salmon to the pan with the pesto mix on top, let it cook half way, and flip it upside down so the pesto mix is on the frying pan, and let it finish cooking.


If you want to stop here, just add a mash and some salad and veggies and it will already be great.
But if you want that extra oomph, put the fish on a baking tray with some grated or sliced cheddar cheese on top, and put it in the oven for a few minutes so the cheese melts on top.

Then you can just dish up this goodness and enjoy.
We recommend mash, asparagus and some lettuce and tomato salad, but you can do anything you like to go along with it.

  1. This looks delicious! I absolutely love pesto and salmon and never thought of experimenting with the two together. I'm trying to improve my cooking lately so I'll definitely try this x
