Tuna Stuffed Mushrooms Recipe
If you want a light dinner that is quick and easy to make and will look fancy and different, this one is for you!
- 5 Large flat mushrooms
- 1 tuna can
- 1 tomato
- 1/4 yellow pepper
- Grated cheddar cheese
- 1 tablespoon Mayo
- Olive oil
- Salt and pepper
Wash the mushrooms and cut their stalk off.
Cut up the pepper and the tomato into small squares after washing them both.
Drain the tuna.
In a bowl add the tuna, tomato, pepper, mayo and mix well. Salt and pepper to taste.
* Don´t over salt it, remember there will be cheese on top.
Fill the mushrooms with the tuna mix. Add some of the grated cheese on top of it.
Preheat the oven to 160 degrees (or medium).
Oil the oven tray and put your mushroom in there with the cheese facing upwards.
Put it in the oven for about 20 minutes.
The cheese should have melted and the mushrooms must have let out some liquid.
Serve as is, or as we suggest:
- Make a colourful salad of lettuce, tomato, cucumber, cheese cubes and olives.
- Make a filo pastry filled with brie and add some damson plum jam on top of it.
