Fish and Potato Bake Recipe


This is an easy recipe that is very healthy. So go ahead and try it.

Ingredients:

- Cod fillets
- Potato
- Broccoli
- Olive oil
- Garlic
- Onion
- Lemon
- Mixed herbs
- Salt and pepper

Preparation:

Clean your broccoli and boil it until tender.

Boil the potatoes for around 10 to 15 minutes. They must be firm but not raw. You can choose if you want it with or without skin.
When they are ready, take them out and let them cool. After they cool, slice them.


In a deep oven tray, smear some olive oil and add your sliced potatoes as a bed for the fish.
Slice some onions and also add them as the bed.
Season your potato bed with salt and pepper.


Give your fillets a rinse with water, then add them on your potato bed.
Squeeze some lemon juice on the fish. Season it with the salt, pepper and the mixed herbs of your choice. Top it up with chopped up garlic.


Cover your tray with foil, and put it in your preheated oven (medium heat).
It is ready to take out when the fish looks fully cooked, the potatoes are soft, and the garlic and onions have a golden brown colour.


Remove from the oven and serve.
