Egg Fried Rice Recipe
This is a quick recipe you can do with left over food.
We had cooked chicken left over, and we wanted to use it up.
So here is my version of a fried rice.
- 1 cup rice
- 2 Eggs
- 1 breast fillet chicken
- 1/2 Green pepper
- 1/2 yellow pepper
- 3 cloves garlic
- 1/2 Onion
- Mixed herbs
- Salt and pepper
- Olive oil
Obs: This recipe was intended for 2 people, but fed 4.
Cook the rice as you would normally.
On ideally a wok (it will make your life easier), put a tablespoon of olive oil, your mixed herbs of your taste, salt and pepper, chopped garlic, onion and the peppers. Let it fry until a golden colour starts showing through.
If your chicken has been cooked already (because it is leftover) add it to the wok after the onions have started to go transparent - Don't add it in chunks, break it apart first.
If your chicken is raw, give it a grill just until completely cooked through and add to the wok just before the rice.
Your fry mixture is nicely golden, so now you add the cooked rice in and give it a mix to even all the goodness on the rice. This is a quick step, no longer than 1 minute.
Add your beaten eggs to the mix, and keep stirring so it will cook evenly. This should not take more than 2 minutes.
Yes, it is ready and delicious, so just serve and enjoy!
