Very Healthy Vegetarian Meal


This isn't the best picture ever, but you can see what's going on.

This post is almost like a recipe but not quite, because I don't find this to be a true recipe, it's just things put together and cooked very healthy.



On the right plate, there are broccoli, green peppers, tomato, beansprout, mushrooms, eggplant and a boiled egg.
This was quick to make, very full of fibres and proteins, and very tasty!

The broccoli was cooked in boiling water until tender. The tip here is to boil the water first and then add the broccoli. What this does is it seals all the nutritive properties inside the broccoli, and you don't loose it to the water.

The green peppers were cut and put on a hot skillet with a small drop of olive oil and grilled until it got some colour and the smell was bursting in the air.
The tomato was cut in half and also put on the skillet the same way the peppers were. This one takes longer to cook because of the quantity of water it has and because I like very cooked tomatoes.
The mushrooms were grilled in the same skillet after the peppers and tomato, on the same oil, this way it grabs some flavour apart from cooking.

The beansprout can be shortly cooked in water like the broccoli or it can be grilled on the skillet like the other ingredients. It is your choice. In water it will become softer, while on the grill it will warm up but will keep the crunchiness.

Leave the seasoning of the above ingredients to after it is cooked.

The item that will take the longest apart from the tomato is the eggplant. This will need a clean skillet, heated up. When you cut your eggplant add it to a bowl, sprinkle olive oil, salt and pepper, and mix it. Here will be more olive oil than the others, because the eggplant has to absorb quite a bit of moisture for it not to stick or burn. Grill it on the skillet for a few minutes on each side, until it gets some colour.

The boiled egg, well, it is a simple boiled egg. For those who don't know how to make boiled egg there are a few ways. Here is 2 ways of making it:
- Put water in a pan and let it get to boiling point. Add the egg and let it cook for 10 minutes. Take it out of the water, and rinse it in cold water so you can actually touch it. Then break the shell and peel it off.
- Put water in a pan with the egg and let it come to a boil. When it reaches boiling point turn off the heat and let the egg sit in the water for 10 minutes. Then rinse it out and break the shell like the method above.

And on the left plate there is pureed avocado. And as simple as it sounds, it is just avocado smashed with a fork and salted.

  2. Sounds like a delicious meal indeed. I bet grilling the veg really brings out the flavour. I usually end up roasting mine as I don't have quite the right pan for a stove top. I often make a dip by mashing boiled eggs into avocado, so this is sort of similar.
