Guacamole Recipe

To celebrate the 100th post, I decided to make a recipe one!

I felt like making a nice and fresh guacamole, to eat something different, light, but still tasty.
I did not have all the original ingredients, so my guacamole is by no means true Mexican. But tasted close enough!

Ingredients:

- Avocado (if you have the big ones like I did, just 1 is enough, if you have the normal small size then 3)
- 1 tomato
- 1 small yellow pepper
- Juice of 1 lemon
- 1 small onion
- Salt and pepper to taste

Preparation:

Chop as small as possible the tomato, pepper and onion.

Spoon the avocado out, and with a fork smash it a bit.
* Tip: add the lemon juice to the avocado when you spoon it out. This way it will not turn brown.

After smashing it, add salt and pepper to taste, and mix it.

Add the tomato, onion and pepper and mix it well.
Taste, and it should be good.

Serve with chips.

To reserve it, cover it with film or put it in a pot with lid, and let it stay in the fridge.
This serves 6 people.

Quick and easy, and very delicious!
How do you make guacamole?

  2. I've never made Guacamole before. I usually forget and have to dash to the shops to get some. I will definitely be trying this.

  4. I've been an avocado kick too lately. I cut one up, add a cut up tomato and some diced onions with some lime juice and some cranberry pear balsamic I have on hand - YUM. I use it to top chicken breasts or in a small taco shell with some fresh slaw. Love it!
