Bailey´s Irish Cream Truffles


This is a very old recipe I came across one day by mistake, and it´s one of my favourites.
I have no idea where I got it from, if you know leave me a comment telling me please!

Last time I made it was very long ago too, so I don´t have step by step pictures, but it´s very simple.

Ingredients



1/4 cup Bailey´s Irish Cream
1 tablespoon Butter
340g Semisweet chocolate broken pieces
2 Egg yolks
1/4 cup Heavy cream
1 cup Cocoa powder

Preparation

Melt the chocolate pieces in a sauce pan. In low heat add the bailey´s and heavy cream and mix.
Whisk in the yolks one by one, so they won´t scramble, they will thicken the mix.
Whisk in the butter, and take it out of the heat.

Refrigerate the mixture for a few hours or overnight until firm.

Make small balls with a teaspoon. Wet lightly your hands so the mixture won´t stick much on your hands.

Roll the balls in powdered cocoa.

Serve.

* Keep them always refrigerated.
